Fudgy Brownie Bites

A few months back, I made a change in my eating habits to see huge positive changes in my health. One of the recipes inspired by this health journey is what I like to call Fudgy Brownie Bites. I was wanting something sweet, gluten-free, and free of refined sugar. I thought about making a brownie in the shape and texture of a cookie. In case you are wondering, that idea did not work out the first few times. But from this mistake came something so simple, rich, and sweetly satisfying. Think of these as a mix between fudge and brownies. And be careful, it’s hard to eat only one.

A few notes to keep in mind before we make these chocolaty delights- you can make these into any shape you want but you’ll need to work quickly for the consistency to come out right. Also, these treats should be enjoyed warm fresh out of the air fryer after the glaze has been applied.

Ingredients:

For the bites:

  • about 6 tbsp of butter

  • about 3-4 heaping tbsps. of unsweetened cocoa powder

  • about 5 or so oz of honey

  • about 1 cup of Carrington Organic Cassava Flour

For the glaze:

  • about 1 -2 tbsps. of butter

  • about ½ - 1 tbsp of unsweetened cocoa powder

  • more honey to taste

Let’s start with the bites: in a cast iron skillet, place 6 tbsp of butter on low-medium heat. Once the butter is melted, add the unsweetened cocoa powder. Use a spoon to stir in the cocoa powder until the cocoa powder is fully incorporated in the butter with no lumps. Once you start adding honey, turn the heat off so the mix doesn’t get hard. Taste to make sure the chocolate butter mix is as sweet as you would like. Then quickly transfer the chocolate butter mix toa heat-safe mixing bowl and slowly add in cassava flour while stirring with a wooden spoon to form batter into a ball. Place in the air fryer at 300 F for 7 minutes.

While the bites are air frying, let’s make the glaze! In the same cast iron skillet, add the ½ - 1 tbsp of butter and let melt. Then add and stir in cocoa powder. Finally, add in and stir in honey to taste. The glaze should look like the picture of the cast iron pan after the air fryer. Once the bites are done in the air fryer (they should look ashy and have a hold. You should also see a few cracks in the bites. Please see the pictures.), place on a stoneware plate and pour the glaze on top. Allow a few seconds for the bites to cool. As soon as the temperature gets to the point that it is very warm without burning your mouth, dig in!
